Cheesy Chicken, Broccoli and Rice

One thing you will learn about me is that I don’t use a lot of canned soups in my recipes. There are a few dishes that are an exception to that rule, but for the most part, I prefer to use wholesome ingredients from my pantry that are not loaded with preservatives. In this recipe we will use milk, flour, chicken broth and a few spices, rather than cream of “whatever”.

This recipe uses an Instant Pot and can be on the table in less than 30 minutes. You more than likely have everything you need in your freezer and pantry. So what are you waiting for? Let’s get cooking!

  1. With the pressure cooker on the "sauté" setting, heat the olive oil on high until sizzling. Add the chicken, onion, salt, pepper, garlic powder and onion powder.
  2. Sauté until the chicken is browned and the onion is translucent, approximately 5 minutes.
  3. Add the rice and chicken broth. Secure the lid in place, close the vent, and cook on high pressure for 6 minutes.
  4. While the chicken and rice mixture is cooking, mix together the milk and flour until smooth.
  5. Perform a quick release when the timer sounds on the pressure cooker. With the lid off, turn the pressure cooker back to the "sauté" setting. Add the milk and flour mixture to the pressure cooker and simmer for about 2 minutes, stirring constantly.
  6. Stir in cheddar cheese and the thawed broccoli. Stir to mix well. Sauté for an additional 2 minutes, or until the broccoli is heated through.
  7. Turn off the pressure cooker and serve immediately. You can garnish with additional cheddar cheese if desired.
